Orzo with Green Peas, Edamame and Spinash

Ingrediënten
- 1 onion, diced
- ½ lemon, juice and zest (zest finely diced)
- 100g frozen green peas
- 150g frozen edamame
- 700-750ml vegetable stock
- 120g orzo
- 40g fresh rocket
- 50g fresh spinach
- 10g fresh basil
- 10g fresh mint
- 25g sunflower seeds
- ½ tbsp white miso paste
- 4 tbsp nutritional yeast
- Extra virgin olive oil
- Salt and pepper
- 60g unsweetened soy yogurt (or any plant-based alternative)
Bereiding
- Heat a glug of extra virgin olive oil in a nonstick pan over a low-medium heat. Add the onion and lemon zest and cook for 5 minutes until fragrant.
- Add the green peas and edamame and stir to combine.
- Add the orzo and vegetable stock. Simmer
over a low heat for 10-12 minutes.
- Meanwhile, add the lemon juice, rocket, spinach, basil, mint, miso paste, nutritional yeast, sunflower seeds, and 80ml (⅓ cup) of water to a high-speed blender. Blend until smooth, season to taste, then stir into the orzo pan.
- Cook until the orzo is al dente.
- In a small bowl, mix the soy yogurt with a
pinch of salt, a crack of black pepper, and a drizzle of olive oil. Stir until well combined.
- Serve by spooning the orzo into bowls.
